
Our most sophisticated coffee--there's a lot going on in the cup as you'll see below. Grown and processed by members of the Rebuild Women's Hope cooperative, these organic beans come from Idjwi Island (Lake Kivu) in Democratic Republic of the Congo (DRC) and represent the broader region well offering a cup that's complex yet surprisingly smooth and balanced.
We like this coffee best after a week or more of rest. The flavors can be intense and benefit from some time to mellow and harmonize (don't ask us about the science behind this. It just happens 🙂).

We're tasting malty sweet tobacco, amaretto, and black tea. Hints of cooked tropical fruit and leather.
Body: Medium
Brightness: Modest but present tartness
Finish: Tea tannins
Roasting Profile: The target for our medium roasts is what we call the "magic middle" where the brightness is tamed and balanced by the caramelized flavors.
